Paper asks why toast lands butter-side down only in government cafeterias
The authors compared trays, table heights, and the morale of the room. Morale was not significant. Tray height was.

A French methods note compared dropped toast in three private canteens and three state ones. Butter-side-down landings were more common in the state rooms. The authors then measured table height and tray lip. The state trays sat higher. Physics, again.
